Olive oil is a healthy and nutritious food choice that has been used for centuries to nourish the body and mind. Studies have shown that regular consumption of olive oil has anti-inflammatory benefits and can reduce levels of inflammation markers such as C-reactive protein and interleukin-6. Furthermore, research conducted in California revealed that consumers are aware of the health benefits of olive oil but are not aware of the specifics. This indicates that there is potential for growth in the consumption of domestic olive oil. Additionally, the Slow Food movement has helped to promote small producers, however, it is often the big firms that are able to access international markets. This highlights the importance of small producers and the need for better access to international markets. In conclusion, olive oil is an excellent choice for those looking to improve their health and wellbeing and there is potential for greater consumption of domestic olive oil.

Olive oil is going from strength to strength, not only in the food market but also in gastronomic tourism, since it is considered a “gourmet” ingredient that is highly appreciated by consumers for its ability to increase the aroma and flavor of foods (Loizzo et al., 2021 ). However, it has not yet been sufficiently exploited at a tourist level, despite the efforts of many public bodies and private entities to turn this region into a quality gastronomic destination. The marketing of olive oil as a gastronomic product can prompt the consumer to discover more about the areas of cultivation and the way of producing it, making it not only a food product but also a tourist product (oleotourism). The consumer is an increasingly demanding figure, who seeks in the consumption of food products not only a way to satisfy their food needs, but also to seek new experiences, feelings, emotions, nature, new services, culture, etc. (Clodoveo et al., 2020 ). These culinary experiences become valuable and rewarding tourist attractions, as indicated by Long (2003) , Ab Karim and Chi (2010) , Millán Vazquez De La Torre et al. (2016) and Fusté-Forné (2019) . On these culinary tours revolving around the designations of origin of olive oil, the oleotourist can:• Appreciate the landscape of the olive grove. • Visit oil mills, which is where olive oil is manufactured either by traditional means or using the new olive press technologies.

Five samples (Oi 1, Oi 3, Oi 6, Oi 7 and Oi 8) were judged as EVOOs whereas samples Oi 2, Oi 4 and Oi 5 turned out to be EVOOs or virgin olive oils according to the specific lab. The potential of excitation-emission fluorescence spectroscopy combined with three-way analysis was investigated for discriminating the photosystem II (PSII) (with the water-oxidizing complex) and without the water-oxidizing complex (wPSII) using unsupervised classification methods. Both techniques were applied to the excitation-emission fluorescence matrices (EEM) of solutions at two of different pH values (2.0 and 12.0). Three fluorescent components were found for all samples that are related to tyrosine (Tyr), tryptophan (Trp) and phenylalanine (Phe) amino acids.
